Although Cyprus exports halloumi cheese around the world, there’s an even better selection in Cyprus.

For example ,this morning,  at the deli counter in my local supermarke in Polis, there were four sorts of halloumi cheese on offer. After consulting the charming Cypriot lady behind the counter, I settled for some from a local village, not factory produced. I asked  her advice on  cooking halloumi, knowing  that if you grill or fry it for too long, it gets a bit rubbery in texture. She suggested that I try it uncooked with water-melon, like the locals. This sounds like a light lunch, perhaps with a glass of excellent local white wine?
